Instructions / How to Make Spiced Aloo Katli
Here’s how you can make a delicious and comforting Aloo Katli for Sehri:
- Prepare the Potatoes: Peel and slice the potatoes, then soak them in water for 10-15 minutes.
- Fry the Aromatics: Heat oil in a wok, add red chillies and curry leaves, and fry on medium flame until crispy. Remove and set aside.
- Fry the Potatoes: In the same oil, add strained potato slices and fry on high flame for 5-6 minutes until light golden. Take them out and set aside.
- Cook the Masala: In the same oil, sauté onions and green chilies on low flame until golden. Add cumin seeds, mix well, then add tomatoes and stir.
- Spice it Up: Add red chili powder, turmeric, salt, coriander seeds, and chaat masala, then mix well. Pour ½ cup water, cover, and let it cook for 2-3 minutes.
- Combine & Cook: Add the fried potatoes, mix well, cover, and let them soften for 3-4 minutes.
- Add Crunch & Garnish: Crush the fried red chillies and curry leaves and mix them into the potatoes, reserving a little for garnish. Sprinkle fresh coriander on top.
