Are Edge Brownies The Best or The Worse?

Do you know how I am certain if I will have a great day or not? Brownies. Sometimes, when I am about to leave for work, I smell fresh brownies from the oven and they instantly lift my mood. Suddenly, a wave of happiness hits me and my boring day turns into an exciting one. I am sure that everyone agrees that brownies are one of the best inventions of mankind. I can’t even imagine my life without brownies.

All right, I am exaggerating a bit but I know that I will be sad.

Brownies in any shape or size is a dream come dream but the corner parts, oh God, feels like they are sent directly from above. There are two types of people in the world; Those who are fond of the extra crispy edges, like me, and those who prefer the soft, dewy center part. I remember visiting a restaurant in Karachi where the owner labeled brownies just so his customers are satisfied according to their personal preference.

One of the reasons why I love edge brownies is because it has a perfect balance ratio. It has two extremely crispy and crunchy corners while two extremely soft corners. Even brownies know how to balance two extremes perfectly. Trust me when I tell you this, you need a little bit of crunch in your boring life.

Edgy parts of the brownie are the rare beautiful parts. You know what else is rare? Black Opal. Is it a coincidence? Is it really? I don’t think so.

When it comes to appearance, it really does matter. Appearance makes food either very tempting or takes away the curiosity to try it. Think about it, are you ever tempted to try Kaleji? It’s because I believe its appearance isn’t attractive at all. But brownies, even the name is so magical. They have a clean, sharp look (the edgy side) but they also have a soft side, like most of us.

I once heard a friend say that the edge part is like the crust of bread. No one really wants it or enjoys it. They just have to keep up with it. This made me angry at first and sad later. But as the darkest of clouds have a silver lining, the fewer people eat edge brownies, the more I get to eat them.

I don’t hate the center part. The center part is also pretty amazing. It has a beautiful, blissful texture on the inside and nothing can compete with that. What I like about the middle part is that it’s so warm and gooey on the inside. Regardless, they still can’t take the place of the edgy parts.

Two important factors make edge brownies chewy i.e., maida (all-purpose flour), and egg whites.

You don’t need to have the most expensive cocoa powder or chocolate to make the best brownies. All you need is a heart full of love. That’s all.
