Ever tried the all famous Gappa Gotala? If you’re dazzled by what I just wrote, Gappa gotala is a giant gol gappa stuffed with chaat and some random (delicious) chutney. Surely you must be looking for a dead simple chaat recipe, with some extras thrown in.

For today’s Cook Like a Pro,  we’ve brought to you this easy stuffed puri chaat that is insanely delicious and easy to recreate! It’s literally like wholesome Desi-ness all in one puri.

The best part? This puri could be served and stuffed with several other sidelines and fillings, the variations are endless. So what’re you waiting for? Lets get down to making it.

Ingredients for Puri Chaat Recipe

Puri

  • 2 cups flour
  • 2 cups of semolina (sooji)
  • ½ tbsp chili powder
  • ½ tbsp salt
  • ½ cup water

Filling

  • 2 cups boiled red kidney beans
  • 2 cups boiled white beans
  • 1 ½ tbsp red crushed chilies
  • 1 ½ tbsp salt
  • 2 chopped onions
  • Juice of one lemon
  • ½ cup yogurt/raita
  • 6 chopped green chilies

Side servings (optional)

  • Yogurt
  • Boiled potato
  • Dalmoth
  • Nimco

Method

Puri

Knead ingredients for dough; make sure it’s dense and not too soft. Allow dough to rest for 10 minutes.

Section dough and roll out each section, keeping it as thin as possible, (Disclaimer: #PuriShaming) use oil to prevent dough from sticking.

Heat the oil for deep frying, place puri in hot oil and every time the puri rises back up to the surface push it back down with the back of your ladle. Repeat this 2-3 times and then slow the heat down, then continue frying for an additional 2 minutes, this will make them super crunchy. Set it aside.

Filling

In a saucepan add sauté oil and onion, beans, yogurt, salt, chilies, and lemon juice. Gently stir for 3-4 minutes, set aside.

You’re almost done!

Assembling the Puri Chaat

Break the puri from the top.

Fill the inside of the puri with chaat, boiled potatoes, yogurt, and ketchup.

Top with nimco and dalmoth, and you’re ready to serve.
